First Froots Vegetarian Recipies Spinach and Pumpkin soup

Cooking time: 20 minutes

Ingredients

800g peel & diced butternut pumpkin
2 tblspns Peanut oil
2 med onion sliced
2 cloves crushed garlic
1/2 bunch English spinach chopped
300ml cream
1 tspn salt
2 tblspns chopped coriander
1/4 cup flaked almonds toasted

Heat oil in deep sided pan or wok.
Saute onions and garlic until glace looking.
Add contents of The Saucy Spice Co. – Spinach & Pumpkin Curry Sachet 25g and stir until fragrant, about 30 secs.
Add pumpkin, cream and salt. Simmer covered for about 20 minutes or until pumpkin is tender, stirring occasionally.
Add spinach, simmer until just wilted
Serve sprinkled with flaked almonds and fresh coriander.
